Title: Cheese-Baked Potatoes
Categories: Lowfat Cheese Vegetable Side dish
Yield: 4 Servings

2 (8 Oz Ea.)
1/2cLow-Fat Cottage Cheese
1/4cSkim Milk
1/4tsSalt
1/8tsPepper
  Paprika -- To Taste
  Baking Potatoes

1. Wash potatoes well. Prick skins in several places. Bake at 425 F until tender (50 to 60 minutes). 2. Remove from oven; cut in half. Scoop out insides of potatoes, leaving skins intact; save skins. Mash potatoes thoroughly. 3. Add remaining ingredients except paprika, and beat until fluffy. Put mashed potato mixture into potato skins. Sprinkle paprika over the tops. 4. Bake at 425 F until heated through and tops are lightly browned (about 10 minutes).

4 servings, 1/2 potato each. 140 calories per serving; 0.7 gram of fat; 0.4 gram of saturated fat; 5 milligrams of cholesterol.
